Unfortunately, morels have a short season, often just a few weeks in some areas—and some years there isn't even a harvest. Luckily, it's easy to dry morels at home and can be stored in air-tight containers at room temperature for up to 6 months. (For longer storage keep them in the freezer.)

HOW TO COOK:

Dried morel mushrooms can be reconstituted in any kind of warm liquid (wine, broth, cream, etc.) for 15 - 20 minutes, and then used in any application in which fresh mushrooms are called for. Try them as a base for soups and sauces, combine with eggs in a scramble or omelet, cook into a risotto, or toss with pasta.
